How to Make Chili Cauliflower:
- Start by chopping the cauliflower into big chunks. Boil some water in a large pot, add a bit of salt, and toss in the cauliflower for about 5-7 minutes. This helps clean it and gets rid of that raw smell. Drain and dry the cauliflower.
- In a big bowl, mix the cauliflower with corn flour, red chili powder, and a pinch of salt. Add a splash of water and stir until every piece is coated.
- Heat oil in a deep pan and fry the cauliflower pieces on medium heat until they’re golden and crispy. Once done, place them on a plate lined with paper towels to soak up the extra oil.
- In the same pan, heat a bit more oil and add garlic-ginger paste and chopped green chilies. Sauté on low until they’re lightly golden. Then, toss in chopped capsicum and onion, cooking for 2-3 minutes until they’re still a bit crunchy.
- Add red chili sauce, tomato ketchup, and soy sauce to the pan. Mix it all up and let it cook for a minute or two. In a small bowl, mix 1 tbsp of corn flour with 3-4 tbsp of water, then pour it into the pan while stirring continuously to thicken the sauce.
- Finally, add the fried cauliflower to the sauce and mix gently so it gets coated nicely.
- Sprinkle some white sesame seeds and garnish with fresh coriander. Your crispy street-style Chili Gobi is ready to go! Serve it hot with green mint chutney or tomato ketchup, and watch everyone love it at your evening parties or special occasions. Enjoy!
