How to make green onion soup
1.Wash and chop the green onion leaves into small pieces.
Peel and chop the onion, wash and chop the green pepper. Peel the garlic and ginger and crush them with the green chilies until they form a smooth paste.
2.Heat the sugar in a saucepan over medium heat.
Once hot, add the cumin and bay leaves and stir for 30 seconds to release their aroma. Add the chopped onion and fry until lightly browned. Then add the ground paste (green chili, garlic and ginger) and cook for another minute.
3.Add the onion leaves and cook for about 5 minutes, stirring occasionally to prevent burning.
This will ensure that all the flavors are perfectly combined.
4.Add 3-4 cups of water and bring to a boil.
Cook for a few minutes to mix the ingredients.
5.Remove the pan from the heat and let it cool completely.
Remove the bay leaves and blend the soup in a food processor until smooth. Strain the soup carefully.
6.Put the strained soup back on the stove and cook for another 5 minutes.
Add salt to taste. Add fresh cream and keep warm before serving.
